Second Episode: Visiting The Distillery In Mexico
Last Wednesday, we finally arrived at the distillery where my mezcal is being made. We then met with one of the people that Fabiola and I have been working with, who was very nice. Of course, we also met the Master Distiller, who learned everything from his father. When you pull into the distillery, the first thing that you see is a shrine to his father, and when you walk up to it, there is a small glass see-through floor, if you will, where some of the last batches of mezcal were made. They gave us a tour of the distillery and showed us where the mezcal is made and how they make it. There are two ways of cooking: the old-fashioned way, which is where they put the many hearts of the agave plant, or the pina in a big fire pit, or now they can put it in a machine, which is still considered artisanal. The fire pit is much more traditional, but if any of the hearts are burned, the product will not be suitable to drink. The other downside of the pit is the workers have to go through the pina hearts and take off the burnt parts because if they don’t, then the drink will also be bad. I wanted my mezcal to be as traditional and the best tasting as possible, so I chose them to use their machine. I hope you guys are ready because my mezcal will be ready by the summer of 2025!
